Cooking a big salmon steak or filet on the Big Green Egg turns out perfect every time. And it’s easy to prep and make! The Big Green egg cooks meat to perfection – the outside sears well with nice grill marks, and the inside is perfectly flaky and tender.

Fresh or frozen (and thawed) salmon will work perfectly. Make your spice mixture, add a squeeze of lemon juice and a little olive oil, and you have a fantastic meal you can grill quickly.

One of the Best Grilling Recipes on the Big Green Egg

We got a Big Green Egg grill which has been a game-changer, it’s by far the best grill we’ve ever owned. It cooks salmon perfectly, makes incredible kabobs and stir fry, and we even bake bread on it!

I like to grill the salmon directly on stainless steel grate, however you can use grilling planks if desired. There are a few Egg accessories that we love: our plancha grill pan which is great for veggies and stir fries, and a Dutch oven pot which I use to bake bread in while the oven is hot. We also get good use out of our meat thermometer which we always use to check the internal temperature of meats. For this salmon, you can use a cedar plank, which can give your salmon filet a great flavor – or add a handful of apple wood chips at the end of the cooking time and close the lid of the Egg for a nice cedar finish.

What’s In This Big Green Egg Grilled Salmon Recipe?

Be sure to visit the recipe card below for full ingredient amounts and recipe instructions!

  • Salmon Fillets or Steaks – we got some delicious fresh salmon from a local fish market (fresh seafood is definitely a perk of living in New England!), but frozen salmon works just as good for this recipe. Make sure it’s thawed and pat dry with a paper towel before adding seasoning and cooking on the grill.
  • Brown Sugar – or you can use a maple or honey glaze.
  • Whole Grain Mustard – the best thing for a really nice flavor and texture. Using a really good mustard makes all the difference, and I like to coat the entire surface of the salmon with it.
  • Soy Sauce
  • Fresh Lemon Juice – or lemon zest
  • Sea Salt & Black Pepper
  • Montreal Steak Spice: Our favorite spice blend,  probably the one we use most in our home! Montreal Steak Spice is a blend of garlic, pepper, salt, oregano, crushed pepper flakes, and a little dill for an amazing flavor.  Great for all kinds of meats and vegetables, we put this spice on everything!

How To Grill Salmon on the Big Green Egg

  1. Prep the grill – light charcoal at the bottom of the Big green egg, add the heat deflector (optional), grill grates, and plancha (grill pan insert) to the egg, and allow the grill to heat up to 500 degrees Fahrenheit.
  2. Meanwhile, place the salmon steaks on a plate with the salmon skin side down.
  3. In a mixing bowl, add the whole grain mustard, brown sugar, soy sauce, fresh lemon juice, and mix well to combine. Brush the top salmon with the mixture with a clean brush or spoon.
  4. Once the grill reaches temperature, gently burp the egg, open the lid, and place the salmon skin-side down on the grates or grill pan. Close the lid off the egg. Allow salmon to grill for 8-10 minutes until salmon is cooked through and reaches an internal temperature of 145 degrees Fahrenheit (always check using a meat thermometer). The thinner edges will cook quicker, so make sure you measure the temperature in the thicket part of the filet.
  5. Remove salmon from grill pan, and serve on a big platter, with a little salt and pepper and any remaining lemon.
