- Boneless Chicken Thighs – I love using boneless, skinless chicken thighs for this recipe. They are tender and taste amazing baked in the oven. We often cook with chicken breasts, however sometimes some dark meat is great for dinner too.
- Adobo Sauce – which you can easily find in grocery stores.
- Brown Sugar
- Chili Powder
- Olive Oil
- Fresh Lime Juice
- Onion Powder:Â adds a delicious and savory flavor to this dish as well, it kick the chicken up a notch!
- Cayenne Pepper– a pinch for a little heat, totally optional.
- Sea Salt & Black Pepper
How To Make This Recipe
- Preheat the oven to 400 degrees Fahrenheit.
- In a large mixing bowl, add the adobo sauce, brown sugar, chili powder, olive oil, fresh lime juice, onion powder, cayenne pepper (if using) and black pepper. With a spoon mix well to combine.
- Add the chicken thighs to the sauce, and toss well to combine, ensuring every inch of chicken is coated in sauce. Place chicken thighs on a sheet pan (or in a cast iron large skillet), and bake in the oven for 30-40 minutes.
- Remove chicken from oven after baking, and using a digital meat thermometer, ensure chicken has reached an internal temperature of 165 degrees Fahrenheit. Let the chicken rest for 5 minutes before slicing.
- Serve cooked chicken hot with your favorite side dishes and enjoy!
- Store leftover chicken in an airtight container for up to 3 days.
