Baked Chipotle Chicken Thighs

Ingredients
  

  • 2 lbs chicken thighs boneless and skinless
  • 1/2 cup adobo sauce
  • 1 olive oil
  • 1 tablespoon brown sugar
  • tablespoon chili powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper for heat
  • 1 lime juiced
  • 1/4 teaspoon black pepper

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit.
  • In a large mixing bowl, add the adobo sauce, brown sugar, chili powder, olive oil, fresh lime juice, onion powder, cayenne pepper (if using) and black pepper. With a spoon mix well to combine.
  • Add the chicken thighs to the sauce, and toss well to combine, ensuring every inch of chicken is coated in sauce. Place chicken thighs on a sheet pan (or in a cast iron large skillet), and bake in the oven for 30-40 minutes.
  • Remove chicken from oven after baking, and using a digital meat thermometer, ensure chicken has reached an internal temperature of 165 degrees Fahrenheit. Let the chicken rest for 5 minutes before slicing.
  • Serve cooked chicken hot with your favorite side dishes and enjoy!
  • Store leftover chicken in an airtight container for up to 3 days.
