This mango marinade recipe is bright, sweet, and herby – it’s great for marinading chicken, pork tenderloin, or beef for a flavorful dinner. This marinade takes 5 minutes to get together, and gives meats a delicious hint of sweetness and acidity.

Add all the marinade ingredients together into a plastic bag or a bowl, add your protein, and let the flavors mix and meld. This tangy marinade is a great way to use fresh or frozen mango, and add a little sweetness to your next savory dish.

This mango marinade will take any meat you cook to the next level!  Mangoes are one of my favorite fruits, and are a great addition to the dinner table. It takes just a couple of minutes to make, and has the absolute best flavor.

Make this marinade the next time you’re grilling or roasting to give your meats a nice smoky and sweet flavor. By marinating meat a few hours (or even overnight, and cook the next day) you get a chance to include some great taste in each bite. It’s great for chicken breasts or boneless chicken thighs, and gives each bite a tropical twist. Save this recipe for your next barbecue,

A Flavorful Marinade with Fruit!

Ripe mango makes a fantastic addition to this tasty sweet marinade. I love adding a few similar elements to all my marinades: an acid (lime juice), some savory spices (garlic and onion powders), some heat (red chili flakes), and a bit of sweetness (from the mango).

Marinates can also break down the meat and get flavor inside the meat, instead of just on top. Acids are especially good to breaking down the meat to make it more tender. Use this easy mango marinade on chicken recipes, beef, and pork – or any protein if your choice.

What’s In This Mango Marinade Recipe?

  • Mango – fresh, ripe mangoes (or frozen!) work great for this recipe. If you can’t find mangoes, you can use mango nectar or juice instead.
  • Brown Sugar
  • Limes – fresh works best, but bottled lime juice could also be used. The lime flavor is so great with chicken, you can add lime zest for extra flavor.
  • Onion Powder: adds a delicious and savory flavor to this dish as well, and the onion powder pairs nicely with the onion.
  • Garlic Powder: Also a major pantry staple ingredient that gets used in our house daily! I love this garlic powder and add it to a lot of recipes that I would use fresh garlic in too.
  • Red Chili Flakes: for a little heat! I like to add a few shakes to this marinade to give this dish a nice complex depth of flavor.
  • Salt – you could also use soy sauce or coconut aminos.
  • Cilantro – I love the flavor of cilantro, especially when combined with lime juice and mango. If you don’t like cilantro, fresh parsley works prefect!

What To Serve with Mango Marinaded Chicken

  • If you are serving up meat with a mango lime marinade, it goes great with coconut rice, brown rice, or jasmine rice.
  • Serve with grilled vegetables like red bell pepper, zucchini, red onion, and fresh chunks of mango.
  • Goes great with cauliflower rice.
  • Cooked mango chicken would be great on Jamaican rasta pasta.
  • And it’s also wonderful with roasted potatoes.

How To Make Marinade with Mangoes

  1. Take a plastic baggie (with a closeable top), or a large bowl and add your protein. Add the chopped mango to the bag along with the additional ingredients: lime juice, brown sugar, onion powder, chili powder, chili flakes, salt, and cilantro to the bag. 
  2. Top with water, just enough to cover the protein. Stir and combine mango marinade and protein until well mixed. Close the bag or seal bowl with plastic wrap, and refrigerate for minimum 4 hours (preferably overnight).
  3. Before cooking the protein. drain the liquid from the marinade (you can choose to keep the mango chunks or discard).

Ingredients
  

  • 1 mango finely chopped
  • 2 limes juiced
  • 1 tablespoon brown sugar
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1/4 teaspoon chili flakes
  • 1 teaspoon salt
  • 1/2 cup cilantro * chopped

Instructions
