This easy salmon recipe is a modern twist on French cuisine with fresh herbs, spices, and a simple mustard lemon sauce. We enjoyed lots of seafood when we visited France a few years ago, and the spice rub and sauce for this salmon recipe inspired me to make this easy salmon recipe.
Start by mixing together a quick rub with Dijon mustard, white wine, French herbs, and salt & pepper. Coat the salmon, and bake or pan fry until the salmon is perfectly cooked. Top with fresh lemon and a melted butter sauce, and serve with your favorite veggies!

This great modern French spiced salmon recipe is a fun twist on seafood with French spices and lemon. It’s an easy recipe to make any time of year using fresh or frozen salmon filets.

Ingredients You’ll Need

- Salmon Fillets – you can use fresh or frozen. I prefer coho or sockeye salmon when I can find it. If you can find whole salmon steaks, those are great, just divide them up before cooking.
- Herbs de Provence: my favorite spice blend! This French blend has a mix of rosemary, thyme, sage, and savory for a wonderful and complex flavor.
- White Wine – I like a sauvignon blanc with this salmon.
- Unsalted Butter – for a little butter sauce to top. You could use brown butter too if you’re extra fancy. Or you can substitute a little olive oil instead.
- Garlic
- Salt
- Dijon Mustard – for a really nice flavor and texture, this Dijon is a favorite in our pantry. Use a good quality mustard, not yellow prepared mustard.
- Black Pepper
- Fresh Lemon Juice – or lemon zest
- Fresh Parsley to garnish, or fresh chives.
How To Make This Recipe
- Preheat the oven to 400 degrees Fahrenheit. Check fish to ensure that all bones or scales are removed from the fish before cooking. Pat with paper towels to dry.
- Place salmon fillets skin side down on a baking sheet or oven-safe cast iron skillet.
- In a small bowl, add the Dijon mustard, garlic, white wine, Herbs de Provence, and black pepper. Mix well to combine, and coat the tops of the salmon evenly.
- Bake salmon at 400 degrees for 12-15 minutes, until internal temperature reaches 145 degrees Fahrenheit. Salmon should be opaque pink and the top should become golden brown, with crispy skin on the bottom.
- Top with fresh parsley, lemon, and melted butter over each piece of salmon.
- Refrigerate leftovers in an airtight container for up to 2 days.

- 4 6-ounce salmon fillets
- 2 cloves garlic minced
- 3 tablespoons Dijon mustard
- 2 tablespoons white wine
- 1 teaspoon Herbs de Provence
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley
Instructions
- Preheat the oven to 400 degrees Fahrenheit. Place salmon fillets on a baking sheet skin-side down (be sure that all bones or scales are removed from the fish before cooking).
