  • Low Sodium Vegetable Stock – I like to use this low sodium vegetable stock for my recipes because it has great flavor… without all the salt.   • Garlic
  • Parmesan Cheese – gives that extra bit of flavor and richness to this dish. Whether you use a sharp real cheese parmesan, or a plant-based version, adding a little extra into the sauce (and for garnish) makes this dish delish.

How Do You Make Cottage Cheese Alfredo?

  1. Bring a large pot of water to a boil, and cook fettuccine noodles according to package instructions. Drain, and set aside.
  2. In a blender or food processor, add the cottage cheese, olive oil, vegetable stock, garlic, parmesan cheese, Italian seasoning, and black pepper. Process or blend on high speed until smooth.
  3. In a large pan, heat the cottage cheese sauce until just bubbling. Add cooked pasta and toss well until pasta is coated. Garnish with black pepper and fresh parsley, and enjoy hot.
  4. Store leftovers in an airtight container for up to 2 days.
