Ingredients
  

  • 8 ounces pasta I used fettuccine
  • 2 cups cottage cheese any milk-fat you prefer
  • 1 tablespoon olive oil
  • 1/2 cup vegetable stock
  • 1 clove garlic chopped
  • 1/3 cup parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped parsley

Instructions
 

  • Bring a large pot of water to a boil, and cook fettuccine noodles according to package instructions. Drain, and set aside.
  • In a blender or food processor, add the cottage cheese, olive oil, vegetable stock, garlic, parmesan cheese, Italian seasoning, and black pepper. Process or blend on high speed until smooth.
  • In a large pan, heat the cottage cheese sauce until just bubbling. Add cooked pasta and toss well until pasta is coated. Garnish with black pepper and fresh parsley, and enjoy hot.
  • Store leftovers in an airtight container for up to 2 days.
