Method
Bring a large pot of water to a boil, and cook fettuccine noodles according to package instructions. Drain, and set aside.
In a blender or food processor, add the cottage cheese, olive oil, vegetable stock, garlic, parmesan cheese, Italian seasoning, and black pepper. Process or blend on high speed until smooth.
In a large pan, heat the cottage cheese sauce until just bubbling. Add cooked pasta and toss well until pasta is coated. Garnish with black pepper and fresh parsley, and enjoy hot.
