This is another fantastic recipe from our good family friend George! He shares the best meals with us, and we love recreating his family recipes. This soup is one of my absolute favorites: it’s quick, simple, and has only 7 ingredients.
Start by sautéing the sausage and onions, add canned tomatoes and beans, pour in the broth, and add the chopped Swiss chard to the pot. It’s hearty, delicious, and a fantastic fall or winter meal idea!

Ingredients For Swiss Chard Soup

- Good Extra Virgin Olive Oil: I like to use this fruity olive oil which has a fantastic flavor and deep color- it’s inexpensive & I like to keep a few liters stocked up in my pantry.
- Onion
- Sausage – we used a spicy chorizo sausage (which I highly recommend) as it gives a fantastic flavor to this soup. If you don’t like spice, you can use a mild sausage instead.
- Fire roasted tomatoes – if you can find canned fire roasted tomatoes (especially ones with added garlic and jalapeno) I would recommend those. If you can’t find them, then regular diced tomatoes would be great.
- Low Sodium Vegetable Stock – I like to use this low sodium vegetable stock for my recipes because it has great flavor… without all the salt. I always use low sodium or no-salt-added broth or stock to start, and then I can add salt or other spices later if needed. Check out some fantastic low sodium recipes
- Swiss Chard – I get amazing Swiss chard from my Misfits Market boxes, it’s big, bright, and delicious!
- Cannellini White Beans: hearty, tender white beans go great in this soup.
How To Make Swiss Chard Soup
- Wash and prep your Swiss chard – I rinse each leaf individually, front back, to ensure any dirt or sand rinses off. Chop the Swiss chard, and set the aside.
- In a large pot, add the olive oil, onions, and sliced sausage. Sauté over medium heat and cook 7 to 8 minutes until onions have become translucent and the sausage has browned.
- To the pot, add the diced tomatoes and juices, and saute over medium heat for 5 minutes.
- Add the vegetable stock, chopped Swiss chard, white beans, and vegetable stock to the pot. Bring to a boil, the reduce heat to a simmer, and cook until the Swiss chard greens are tender.
- Serve hot, and store leftovers in an airtight container for up to 4 days.

- 8 cups vegetable stock
- 1 large bunch Swiss chard chopped
