Swiss Chard Soup with Sausage and Beans

This Swiss chard soup with sausage and beans is a hearty and delicious recipe, loaded with tender greens in each bite! An easy lunch or dinner recipe you can make in less than 30 minutes.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion sliced
  • 1 link chorizo sausage or other spicy sausage
  • 1 14-ounce can fire roasted tomatoes
  • 8 cups vegetable stock
  • 1 large bunch Swiss chard chopped
  • 2 14-ounce cans white beans drained

Method

  1. Wash and prep your Swiss chard - I rinse each leaf individually, front back, to ensure any dirt or sand rinses off. Chop the Swiss chard, and set the aside.
  2. In a large pot, add the olive oil, onions, and sliced sausage. Sauté over medium heat and cook 7 to 8 minutes until onions have become translucent and the sausage has browned.
  3. To the pot, add the diced tomatoes and juices, and saute over medium heat for 5 minutes.
  4. Add the vegetable stock, chopped Swiss chard, white beans, and vegetable stock to the pot. Bring to a boil, the reduce heat to a simmer, and cook until the Swiss chard greens are tender.
  5. Serve hot, and store leftovers in an airtight container for up to 4 days.
