These easy chickpeas are great to toss into a fresh chopped salad, enjoy with fresh cooked pasta, or eat as a snack! I love serving these alongside air fryer Trader Joe’s spring rolls as appetizers.
I’ve always been a huge fan of Trader Joe’s, their products are always excellent! The canned Greek chickpeas have been a favorite of mine, and I wanted to try and recreate them at home with simple ingredients.
And today’s recipe is a major winner! I started by mixing the chickpeas together in a bowl, and marinating them overnight in fresh herbs and spices. The result? Delicious homemade chickpeas that taste just like the canned variety! And made at a fraction of the price.

Canned Chickpeas
Also known as garbanzo beans, canned chickpeas can be found at most any grocery store. I recommend using regular chickpeas, not a salt-free or low-sodium variety.
Extra Virgin Olive Oil
Trader Joe’s packs their chickpeas in soybean oil, but I wanted to use olive oil instead. You could also substitute in avocado oil or any other neutral oil if desired.
Salt
I used 1/2 teaspoon of salt, which is quite a bit, for the brine of the chickpeas. I used pink sea salt, but you can use regualr salt or kosher salt if desired.
Lemon Juice
I always use fresh lemon juice in my recipes, as the flavor is much better than bottled. Highly recommend fresh lemon, and you can add lemon zest too for a more citrusy flavor.
Fresh Parsley
Fresh is best for this recipe. Parsley is a fantastic herb and gives the chickpeas a wonderful flavor. You could use dried parsley if you don’t have fresh on hand.
Ground Cumin
The ground cumin gives these chickpeas a deep, rich, slightly smoky flavor.
Garlic Powder
I used granulated garlic powder for this recipe instead of fresh garlic, as the ingredients on the original said powder. You could add some fresh minced garlic as well if you liked a stronger garlic flavor.
Black Pepper
I used fresh ground tellicherry black peppercorns for this – but any fresh cracked black pepper works!
How To Make This Recipe
- Drain and rinse your canned chickpeas. Once drained, place them in a medium mixing bowl.
- Add the extra virgin olive oil, salt, squeeze of fresh lemon juice, fresh chopped parsley, cumin, garlic powder and black pepper. Mix well to combine.
- Place the chickpea mixture in an airtight container (I used a quart sized mason jar with an airtight lid), and refrigerate for 24 hours. Make sure to stir the chickpeas every few hours so they are evenly infused with the oil and spices.
- Remove chickpeas from the refrigerator an hour before serving, so the olive oil comes to room temperature.
- Serve room temperature, or heat if desired!

Store any leftover chickpeas in an airtight container, and refrigerate for up to 3 days.
Ways To Enjoy These Tasty Greek Marinated Chickpeas
I love adding these flavorful marinated chickpeas to so many dishes – talk about a versatile food.
One of my favorite ways to enjoy these chickpeas is in a big chopped Greek salad with kalamata or green olives, red onion, fresh sliced tomatoes, and feta cheese. This easy Greek chickpea salad is one of my favorite salads, and these chickpeas make it even better.
They are also great tossed in a pasta salad too. The olive oil and spices that the chickpeas marinate in makes a great dressing.
You can use these chickpeas as a topping for a loaded hummus! Or add them to a Greek bowl with greens, hummus, and chicken to top.
Mash them for a Mediterranean-inspired chickpea salad sandwich with fresh greens. Or mash them with canned tuna for a great tuna salad.
Sauté them until golden brown and toss with fresh pasta or orzo.

- This Greek chickpea recipe is vegan, vegetarian, dairy free, and egg free.
- To make gluten free, ensure all ingredients you are using are certified GF before adding.
