We absolutely love Trader Joe’s, and I had to develop a copycat recipe of one of my favorite products: their Everything And the Elote Dip! It’s a creamy Greek yogurt dip spiced with chile pepper, cumin, and cilantro for a spicy and smoky flavor. All the flavors of Mexican street corn in a delicious side dish!

This Mexican street corn dip is great to make for company! It’s great on a game day, for watching football, or for brining to a summer BBQ or gathering. It’s also a delicious Cinco de Mayo dip too, something different than guacamole or salsa. It has the perfect combination of creamy, salty, and spicy – and is great with plain or corn chips.

Greek Yogurt

The key ingredient in this tasty dip, Greek yogurt has a thick texture and sharp tangy flavor.  Make sure you use plain Greek yogurt for this dip, and not a flavored variety. You can also substitute sour cream (although the dip won’t be as thick) or cream cheese too. 

The first time I made this dip I used a non-fat yogurt, and honestly, it wasn’t as good. Use a whole milk Greek yogurt, or a 5% fat minimum for the best flavor.

Corn

I used frozen yellow sweet corn for this recipe. You could also use fresh corn kernels, or canned corn instead. I like using a sweet corn for this recipe as the natural flavor of the corn adds a great sweet sweetness to the dip and has a great texture.

Lime

A little goes a long way, but I liked adding a bit of acidity from the fresh lime juice. You could also use lemon juice instead.

Spices

You can use Trader Joe’s elote seasoning blend (which you can find in their spice section), but I made a nice copycat with chili powder, garlic powder, chipotle pepper, salt, cumin, and black pepper.

Cheese

I liked using crumbled cotija cheese for this dip, as cotija is traditionally served on Mexican street corn. You could also use grated parmesan cheese, a Mexican cheese blend, queso fresco, pepper jack, Monterey jack, or cheddar cheese.

Fresh Cilantro

I love the flavor of cilantro, and it’s one of the ingredients in the real dip, so add in some fresh cilantro if you like it! If you don’t love the flavor of cilantro, you can substitute fresh parsley, or leave it out altogether.

How To Make Trader Joe’s Elote Corn Dip

  1. In a mixing bowl, add the yogurt, corn, lime juice, chili powder, chipotle pepper, salt and black pepper, cheddar, and cumin. 
  2. With a wooden spoon, mix well to combine, until all ingredients are well-incorporated into this creamy dip. Add in the cilantro and stir again.
  3. Give it a taste test, and add additional salt (or lime) if desired.
  4. Serve with corn chips (I like TJ’s organic corn chip dippers), tortilla chips, chopped vegetables, or crackers.
  5. Store leftover in an airtight container and refrigerate for up to 3 days.

How To Eat This Mexican Corn Dip

I like serving this with chips best – but there are lots of creative ways to enjoy it! You can serve it up on your next taco night and scoop it onto your tacos instead of sour cream. 

You could drizzle it over loaded nachos, of spread it inside a burrito for extra creaminess! Or use it as a dip for quesadillas.

  • 1 cup whole milk Greek yogurt
  • 1/3 cup yellow corn *see note for canned/frozen
  • 1 teaspoon lime juiced
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground chipotle pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cotija cheese finely crumbled
  • 1/4 teaspoon cumin
  • 2 tablespoons fresh cilantro chopped

Instructions
 

  • In a mixing bowl, add the yogurt, corn, lime juice, chili powder, chipotle pepper, salt and black pepper, cheese, and cumin.
  • With a wooden spoon, mix well to combine, until all ingredients are well-incorporated into this creamy dip. Add in the cilantro and stir again.
  • Taste, and add additional salt if desired.
  • Serve with corn chips, tortilla chips, chopped vegetables, or crackers.

Notes

A Note On Using Canned or Frozen Corn

If using canned corn, make sure the corn is drained thoroughly before adding to the dip.
If using frozen corn, thaw the corn (you can do this in the microwave or by running the corn under warm water), and drain it before adding to the dip.
