This baked BBQ chicken thighs recipe is a simple easy oven baked dinner idea! Ready in 30 minutes and so delicious, this is one dinner the whole family will love.
In a large mixing bowl, add the adobo sauce, brown sugar, chili powder, olive oil, fresh lime juice, onion powder, cayenne pepper (if using) and black pepper. With a spoon mix well to combine.
Add the chicken thighs to the sauce, and toss well to combine, ensuring every inch of chicken is coated in sauce. Place chicken thighs on a sheet pan (or in a cast iron large skillet), and bake in the oven for 30-40 minutes.
Remove chicken from oven after baking, and using a digital meat thermometer, ensure chicken has reached an internal temperature of 165 degrees Fahrenheit. Let the chicken rest for 5 minutes before slicing.
Serve cooked chicken hot with your favorite side dishes and enjoy!
Store leftover chicken in an airtight container for up to 3 days.
