This brisket burger recipe is delicious and flavorful, made with ground brisket meat, breadcrumbs, spices, and cooked to perfection! A flavorful burger recipe that is a crowd-pleaser: great for BBQs, cookouts, or family dinners.

Once you’ve formed your patties, they are perfect to cook on the grill, or in a cast iron skillet in on the stovetop. Add the patties to a lightly toasted bun, add your favorite toppings, and enjoy!

When the grill is on, we love making homemade burgers! They are perfect to add your favorite spices and rubs to for great flavor in each bite. We got the idea for brisket burgers after a family member made them for us with ground brisket, and they were some of the best burgers we ever had!

In the recipe below, I grind my own brisket using my stand mixer meat grinder attachment, but you can ask your butcher or meat counter to grind bsiket for you at the store.

Burgers also make a great family dinner idea, as everyone can customize their own burger with their favorite toppings! From crispy air fryer onion strings to simple lettuce and tomato, these burger patties are the base for a fantastic meal.

  • Brisket – a super flavorful cut of meat, which is great to grind at home in your meat grinder. We usually get a whole brisket, and divide it up for the freezer, and we always make these great burgers.
  • Eggs – help the burgers stick together!
  • BBQ rub – any variety you prefer.
  • Garlic powder and onion powder – for extra flavors.
  • Worcestershire sauce – adds a wonderful sharp and savory addition to these burgers.
  • Bredcrumbs – we use a panko breakcrumb, but you can also use crushed crackers.
  • Cinnamon – just a pinch adds a great flavor, very subtle!
  • Sea salt and black pepper

How To Make These Burgers

Step 1: Cut the fat off the brisket meat. Get as much fat trimmed of as possible. Then cut the meat into slices that will fit through your meat grinder.

Step 2: Feed the brisket slices through the meat grinder, until they are all ground.

Step 3: Add the remaining ingredients to the ground brisket: breadcrumbs, eggs, BBQ rub, onion powder, garlic powder, Worcestershire sauce, cinnamon, salt, and pepper.

Step 4: With two spoons (or your hands) mix well to combine all ingredients together until well-mixed.

Step 5: Form the ground brisket mixture into balls (to be smashed down) or patties.

Step 6: Grill the brisket burger patties on a cast iron pan, or on the grill until they are cooked thoroughly. Serve on a bun with your favorite toppings and enjoy!

  • 2 lb whole brisket
  • 2 eggs
  • 1 tablespoon BBQ rub
