Ingredients
  

  • 8 ounces stir fry noodles
  • 3 tablespoons butter
  • 8 ounces shiitake mushrooms sliced
  • 4 cloves fresh garlic minced
  • 1 tablespoon honey
  • 1/4 cup stir fry sauce
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon soy sauce
  • 1 tablespoon parmesan cheese grated
  • 2 tablespoons chives chopped, or use 2 green onions

Instructions
 

  • Cook stir fry noodles according to package instructions. Drain, and set aside.
  • In a large skillet or wok, add the butter over medium heat and wait until it's melted.
  • Add the sliced shiitake mushrooms, and cook for 6-7 minutes in the butter until golden brown, stirring every few minutes.
  • Add the fresh garlic, honey, stir fry sauce, soy sauce, black pepper and the cooked noodles into the pan, and toss well to combine.
  • Cook over medium heat for 3-4 minutes or until the noodles are hot and heated through.
  • Grate fresh parmesan cheese over the noodles and garnish with the chives. Serve hot!

Notes

Additions and Substitutions
In addition to the butter, you can add a teaspoon of toasted sesame oil for extra flavor.
I used a store bought stir-fry sauce, but you could add in some oyster sauce, fish sauce, or hoisin sauce. 
If you don't have honey, you can use brown sugar, maple syrup, or agave nectar.
Dietary Modifications
​This recipe is meatless, just be sure you use a vegetarian stir fry sauce for a vegetarian option.
Use plant-based butter, noodles, and sauce for a vegan option.
Use thick rice noodles for a gluten free noodle option. Make sure any sauce ingredients (like stir fry sauce or soy sauce) are certified gluten free as well.
