Cook stir fry noodles according to package instructions. Drain, and set aside.
In a large skillet or wok, add the butter over medium heat and wait until it's melted.
Add the sliced shiitake mushrooms, and cook for 6-7 minutes in the butter until golden brown, stirring every few minutes.
Add the fresh garlic, honey, stir fry sauce, soy sauce, black pepper and the cooked noodles into the pan, and toss well to combine.
Cook over medium heat for 3-4 minutes or until the noodles are hot and heated through.
Grate fresh parmesan cheese over the noodles and garnish with the chives. Serve hot!

Additions and SubstitutionsIn addition to the butter, you can add a teaspoon of toasted sesame oil for extra flavor.I used a store bought stir-fry sauce, but you could add in some oyster sauce, fish sauce, or hoisin sauce.
