Tzatziki Shrimp

Ingredients
  

For the Shrimp

  • 1 lb shrimp uncooked, peeled, and deveined
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 lemon juiced

For the Tzatziki Sauce

  • 1.5 cups plain unsweetened Greek yogurt
  • 1/4 cup red wine vinegar
  • 1/2 lemon juiced
  • 2 cloves garlic minced
  • 1 teaspoon onion powder
  • 2 tablespoons fresh chopped dill or 1/2 teaspoon dried

Instructions
 

  • Rinse shrimp under cold water, allow to drain, and set aside.
  • In a shallow pan or cast iron skillet, heat the butter over low heat. Add the minced garlic and sauté for 3 to 4 minutes until the garlic begins to brown at the outside. Add the salt and pepper.
  • Turn up the heat to medium heat, and place the shrimp in an even layer at the bottom of the pan. Allow the shrimp to cook for 3 to 4 minutes until pink on one side, then flip the shrimp and cook for an additional 3 to 5 minutes on the other side until cooked through. Add the lemon juice and toss well to combine.
  • Make the tzatziki: in a medium mixing bowl, add all the tzatziki ingredients and stir well to combine.
  • To plate the shrimp: add the tzatziki sauce to the plate, and place the shrimp on top of the sauce. Dip shrimp in tzatziki and enjoy!
