Turkey Salad with Greek Yogurt

This turkey salad with Greek yogurt recipe is light, creamy, and a fantastic way to use up leftover turkey. Made with apples, celery, and walnuts for a delicious crunch in each bite - with no mayo!

Ingredients
  

  • 2 cups cooked turkey meat light or dark
  • 1 apple diced
  • 2 stalks celery chopped
  • 1 cup plain Greek Yogurt
  • 1 tablespoon dijon mustard
  • 1/4 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup walnuts crushed
  • 1/2 cup fresh parsley chopped

Instructions
 

  • Chop your turkey into small bite-sized pieces, or shred it with a fork.
  • In a large mixing bowl, add the turkey , apple, celery Greek yogurt, Dijon mustard, salt, and pepper. Stir well and taste, adding more and and pepper if desired.
  • Add the walnuts and parsley, and fold into the the turkey salad.
  • Serve over arugula, spinach, in a sandwich, or on a wrap and enjoy!

Notes

Substitutions and Additions

  • You can use any kind of light or dark meat turkey for this recipe, either would be great.
  • Instead of the apple, add in 1/4 cup of leftover cranberry sauce! It'll give the turkey salad a nice sweetness.
  • You can add in chopped pecans or slivered almonds instead of the walnuts.
