Turkey Salad with Greek Yogurt

This turkey salad with Greek yogurt recipe is light, creamy, and a fantastic way to use up leftover turkey. Made with apples, celery, and walnuts for a delicious crunch in each bite - with no mayo!

Ingredients

  • 2 cups cooked turkey meat light or dark
  • 1 apple diced
  • 2 stalks celery chopped
  • 1 cup plain Greek Yogurt
  • 1 tablespoon dijon mustard
  • 1/4 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup walnuts crushed
  • 1/2 cup fresh parsley chopped

Method

  1. Chop your turkey into small bite-sized pieces, or shred it with a fork.
  2. In a large mixing bowl, add the turkey , apple, celery Greek yogurt, Dijon mustard, salt, and pepper. Stir well and taste, adding more and and pepper if desired.
  3. Add the walnuts and parsley, and fold into the the turkey salad.
  4. Serve over arugula, spinach, in a sandwich, or on a wrap and enjoy!

Notes

Substitutions and Additions

  • You can use any kind of light or dark meat turkey for this recipe, either would be great.
  • Instead of the apple, add in 1/4 cup of leftover cranberry sauce! It'll give the turkey salad a nice sweetness.
  • You can add in chopped pecans or slivered almonds instead of the walnuts.
