Equipment

  • Serving Dish

Ingredients

  • 1 lb large cooked shrimp peeled and deveined
  • 1 ripe avocado diced
  • 1/2 cup cocktail sauce
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon black pepper fresh cracked is best
  • Tortilla chips or crackers optional for serving

Instructions

  • Rinsed the cooked shrimp under cold running water, drain and pat with a paper towel to dry. Set aside in a bowl.
  • Prepare your avocado: halve the avocado and remove the pit. With a spoon, scoop out the inside flesh. Dice with a knife, and place the diced avocado in a mixing bowl. Squeeze the fresh lime juice over the shrimp and add the cracked black pepper. Mix well to combine.
  • In a small serving dish cocktail glass (I use a wide margarita glass), add the cocktail sauce.
  • To serve - enjoy one shrimp dipped in cocktail sauce with diced avocado on top. You can use a toothpick or enjoy on tortilla chips or crackers.

Notes

Additions and Substitutions
  • Add a tablespoon of freshly chopped cilantro on top.
  • If you don't have limes you can use a fresh lemon instead to toss with the avocado.
  • Want more crunch? Add some chopped cucumber or diced mango to switch up the flavor!
  • Sprinkle a little smoked paprika over each of the shrimp and avocado bites if desired.
  • If you like the flavor of horseradish, you can stir in a teaspoon or two of prepared horseradish into the cocktail sauce if you prefer.
