Ingredients

  • 2 lbs pork chops bone-in
  • 1 tablespoon olive oil
  • 1 large onion thinly sliced
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup apple juice
  • 1/4 cup apple cider vinegar
  • 1 cup BBQ sauce
  • 12 pack slider rolls

Equipment

  • Slow Cooker or Pressure Cooker
  • Bowl
  • Forks

Method

  1. In the bottom of the crock pot, add the olive oil and onions, and toss well to combine.
  2. Add the paprika, chili powder, cumin, black pepper, and salt to the onions. Mix well to combine, coating the onions in as much of the spices as possible. Add the pork chops on top.
  3. Pour in the apple juice and the apple cider vinegar to the bottom of the crock pot. Mix everything well.
  4. Cover and cook on low for 8 to 10 hours or high for 5 to 6 hours, until the pork chops are fork-tender and reach an internal temperature of 200 degrees Fahrenheit.
  5. Once the pork is done, remove it from the bone and place it into a bowl. Shred it with two forks and toss the shredded meat with BBQ sauce.
  6. Serve hot, on buns, rolls, or over baked potatoes. Enjoy!

Expert Tips
  • If you use bone-in pork chops, be sure to remove all the bones and bone pieces from the pork before serving.
  • Try different BBQ sauce varieties for different flavors: hickory, honey BBQ, and mesquite are all great options!
  • If making this recipe ahead of time, store it in the crockpot (covered) and refrigerate for up to 3 days. Make sure to give the pork 1-2 hours to come back up to temperature before serving.
