This monster cookie protein bites recipe is a sweet, chewy, high-protein snack that is simple and easy to make! This recipe is loaded with rolled oats, chocolate chips, peanut butter, protein, and colorful chocolate candies in each bite.

Ingredients

  • 1.5 cups rolled oats use gluten free if desired
  • 2/3 cup creamy peanut butter
  • 1/3 cup honey
  • 1/4 cup vanilla protein powder
  • 1/2 cup mini chocolate chips
  • 1 cup M&M candies

Equipment

  • Food Processor
  • Mixing Bowl

Method

  1. In a food processor, add the rolled oats, peanut butter, and honey.
  2. Add in the protein powder and 1/2 of the chocolate chips (save the other half for later).
  3. Turn on the food processor. Start by pulsing the ingredients, then turn fully on until the dough is smooth.
  4. Transfer the oat mixture to a large mixing bowl. Stir in the remaining half of the chocolate chips and all the chocolate candies. Mix well to combine.
  5. Take about 1 tablespoon of the oat mixture and roll it in your hands until it forms a ball. Repeat until all the oat mixture has been used. Enjoy!

Notes

Additions and Substitutions
Instead of honey, you can use a maple syrup or agave nectar for plant-based sweetness. Both have a wonderful sticky texture that works perfectly in these bites.
You can use other types of chocolate too. You can try white chocolate chips or a different chocolate candy for new flavors and textures.
Instead of peanut butter, try making these with almond butter, sunbutter, or another nut butter instead.
