Line your air fryer basket with parchment paper (or a parchment paper liner).
Add the rolled oats, walnuts, honey, coconut oil, vanilla extract, cinnamon, and flaxseeds to a medium mixing bowl. Mix with a spoon until all ingredients are well combined.
Place the granola in a single layer on the parchment paper, and press the granola down with a spoon.
Set the air fryer to 310 degrees Fahrenheit, and air fry the granola for 12-15 minutes, or until golden brown and crisp.
Carefully remove the parchment paper from the air fryer basket, and allow to fully cool before enjoying. The granola will harden as it cools.
Store in an air-tight container and refrigerate for up to 3 days.

Dietary Modifications
This recipe is vegetarian, because it uses honey. To make vegan, substitute maple syrup or agave nectar for the honey.
To make gluten free, ensure the oats and all other ingredients are certified gluten free on the packaging before using.
