Ground Bison Chili

This ground bison chili recipe is a hearty, satisfying, and simple meal made with lean ground bison meat, peppers, onions, and wonderful spices. It's great way to try something different by taking a classic chili recipe and giving it a twist!

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 lb ground bison
  • 1 large sweet onion chopped
  • 4 cloves garlic minced
  • 2 tablespoons chili powder
  • 2 tablespoons brown sugar
  • 1.5 tablespoons balsamic vinegar
  • 1 tablespoon cumin
  • 1 tablespoon cocoa powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon oregano
  • ¼ pinch cayenne pepper
  • 28 ounces no-salt-added diced tomatoes with juice
  • 6 ounces tomato paste
  • 2 cups chicken stock
  • 28 ounces beans I used kidney beans and black beans
  • 2 large bell peppers diced
  • 1 teaspoon salt

Method

  1. Step 1: In a large pot or Dutch oven, heat the olive oil over medium-low heat. Add the ground bison meat and brown until cooked through.
  2. Step 2: Add the chopped onion and garlic and cook for 3-4 minutes until browned.
  3. Step 3: To the bison and onions, add the spices: chili powder, cumin, oregano, cocoa powder, brown sugar, balsamic vinegar, smoked paprika, and cayenne pepper. Heat for an additional 2 minutes and stir.
  4. Step 4: Add the no-salt-added diced tomatoes with their juices, the tomato paste, and salt. Stir well to combine.
  5. Step 5: Add in the chicken stock, bell peppers, and beans to the pot. Bring to a boil, then reduce heat to a simmer and cook for 30 minutes until vegetables have softened.
  6. Step 6: Add in diced chilis for extra heat if desired, stir and serve hot!
