Method
Step 1: In a large pot or Dutch oven, heat the olive oil over medium-low heat. Add the ground bison meat and brown until cooked through.
Step 2: Add the chopped onion and garlic and cook for 3-4 minutes until browned.
Step 3: To the bison and onions, add the spices: chili powder, cumin, oregano, cocoa powder, brown sugar, balsamic vinegar, smoked paprika, and cayenne pepper. Heat for an additional 2 minutes and stir.
Step 4: Add the no-salt-added diced tomatoes with their juices, the tomato paste, and salt. Stir well to combine.
Step 5: Add in the chicken stock, bell peppers, and beans to the pot. Bring to a boil, then reduce heat to a simmer and cook for 30 minutes until vegetables have softened.
Step 6: Add in diced chilis for extra heat if desired, stir and serve hot!
Browning the ground bison first gives the chili a deeper flavor than adding the bison to the chili directly.
This recipe can easily be gluten free - just ensure any canned ingredients (like tomatoes, beans, or spices) are certified gluten free before enjoying.
