This copycat Trader Joe's Bruschetta recipe sauce is sweet, tangy, and SO flavorful - a taste of summer in each bite! Made with diced tomatoes, fresh garlic, olive oil, basil, and a tangy vinegar dressing this is one incredible appetizer that tastes just as good as the original.
Chop the tomatoes - Finely dice tomatoes into small pieces and place in a large mixing bowl.
Add the minced garlic, olive oil, and white balsamic vinegar, fresh sliced basil, sugar, salt, and pepper.
Mix well to combine. The bruschetta sauce will be a bit liquid-y, but don't drain! Allow the tomatoes to marinade in the sauce for at least a day (then drain if you prefer). Taste and add more garlic, or a pinch of salt, or basil if desired.
Serve immediately, or refrigerate and enjoy for up to 4 days.

Recipe Notes
Canola oil is listed as one of the ingredients in TJ's bruschetta on the label. I left this out, as I didn't have any on hand and the olive oil had the perfect flavor. If you want to stay true to the original, you can add some if you have on hand.
Don't strain! Keep the tomatoes marinating in the sauce. If it's too watery for you, serve with a slotted spoon.
Additions and Substitutions
If you can't find white balsamic vinegar, you can mix 2 tablespoons of white wine vinegar with 2 tablespoons of regular aged balsamic. The color will be a bit darker than the store-bought sauce, but the flavor is delicious.
Fresh garlic is best, but you can use minced jarred garlic in a pinch.
For a spicier version, add 1/2 teaspoon chili flakes into the sauce.
