Chicken Sausage Caesar Salad

This chicken sausage Caesar salad recipe is a great twist on a classic Caesar, made with fresh crisp lettuce, juicy sliced chicken sausage, creamy dressing, and shaved parmesan cheese. This quick and easy meal prep is high in protein and macro-friendly.

Ingredients

  • 8 chicken sausages any flavor you prefer
  • 1 14 ounce can chickpeas
  • 1 teaspoon olive oil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 2 heads romaine lettuce
  • 1/2 cup Parmesan cheese
  • 1/2 cup Caesar dressing
  • 1 lemon sliced into wedges

Equipment

  • Mixing Bowl
  • Oven or Air Fryer
  • Pan

Method

  1. Cook the chicken sausage according to package directions. Once done, slice and set aside.
  2. In a large mixing bowl, toss the drained chickpeas with olive oil, onion powder, garlic powder and paprika. Mix well to combine.
  3. Place the chickpeas in the air fryer at 400 degrees for 10 minutes, or fry in a skillet for 8 to 10 minutes until crispy.
  4. Chop the romaine lettuce into bite size pieces. Add to a large bowl, or divide the lettuce in four portions if meal prepping.
  5. In each portion of lettuce, two of the cooked sausages, half a cup of chickpeas, 2 tablespoons Parmesan cheese and 2 tbsp Caesar dressing. Finish with a squeeze of fresh lemon juice, and toss well to combine - enjoy!
