Caprese Breakfast Sandwich

This tasty Caprese breakfast sandwich recipe has thick sliced tomatoes, basil scrambled eggs, and fresh mozzarella cheese on a toasted English muffin with a balsamic drizzle! A quick and tasty breakfast sandwich that is meatless and so good.

Ingredients

  • 4 English muffins
  • 1 large tomato
  • 2 tablespoons fresh basil plus extra for serving
  • 4 eggs
  • 1 tablespoon parmesan cheese plus extra for serving
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon butter
  • 1 tablespoon balsamic vinegar

Method

  1. Slice the English muffins in half, and toast them. Place them on a plate and set aside.
  2. Slice your tomatoes, mozzarella cheese, and fresh basil.
  3. In a medium dish, crack the eggs and scramble them with a fork. Add in the fresh basil, parmesan cheese, salt, and pepper.
  4. Heat the melted butter in a pan over low heat. Add the eggs to the pan, and cook for 6 to 8 minutes, gently folding them over a few times with a wooden spoon until cooked.
  5. Time to assemble the sandwich! Take your English muffin, and on the bottom half add some scrambled egg, slices of fresh mozzarella, tomatoes and fresh basil. Top with balsamic vinegar!
  6. Top the breakfast sandwich with parmesan cheese and enjoy!

Notes

Substitutions and Variations
  • You can used cheddar, Swiss, muenster, smoked Gouda or another sliced cheese instead of mozzarella.
  • Add some fresh baby spinach for extra flavor and veggies.
  • Instead of fresh basil, you could add some pesto sauce in with the eggs.
  • Instead of an English muffin, you can also enjoy this breakfast sandwich on a bagel or on toast.
