Beef Stew with Potatoes

This beef stew with potatoes recipe is easy and hearty, with tender cooked beef, spices, and root vegetables. It makes a great cozy dinner year-round, and is a great recipe to make for a family dinner to cook for guests.

Ingredients

  • 2 lbs stew beef chopped into 1-inch pieces
  • 4 cups water divided
  • 4 onions sliced
  • 2 tablespoons paprika paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 lbs carrots sliced
  • 2 lbs potatoes chopped

  • Dutch Oven

Method

  1. In a large Dutch Oven, or other heavy pot, add 1 cup of water and the onions. Cook over low heat for about 10 minutes, until the onions are lightly browned or transparent. Stir in the paprika, salt, and pepper and stir onions. Add the remaining 3 cups of water, and bring to a boil.
  2. Add the stew meat, and stir until boiling. Bring the heat down to low, cover, and simmer for 1 hour.
  3. Add the carrots and potatoes, and continue to simmer for another hour until beef is tender and vegetables are cooked through.
  4. Taste and adjust seasoning as needed.  Serve over egg noodles, rice, or a thick slice of crusty bread - enjoy!
