This Swiss chard soup with sausage and beans is a hearty and delicious recipe, loaded with tender greens in each bite! An easy lunch or dinner recipe you can make in less than 30 minutes.
Wash and prep your Swiss chard - I rinse each leaf individually, front back, to ensure any dirt or sand rinses off. Chop the Swiss chard, and set the aside.
In a large pot, add the olive oil, onions, and sliced sausage. Sauté over medium heat and cook 7 to 8 minutes until onions have become translucent and the sausage has browned.
To the pot, add the diced tomatoes and juices, and saute over medium heat for 5 minutes.
Add the vegetable stock, chopped Swiss chard, white beans, and vegetable stock to the pot. Bring to a boil, the reduce heat to a simmer, and cook until the Swiss chard greens are tender.
Serve hot, and store leftovers in an airtight container for up to 4 days.
