How To Make This Italian Egg Breakfast Sandwich
Step 1: Slice the English muffins in half, and toast them. Place them on a plate and set aside.
Step 2: Slice your tomatoes, mozzarella cheese, and fresh basil.
Step 3: In a medium dish, crack the eggs and scramble them with a fork. Add in the fresh basil, parmesan cheese, salt, and pepper.
Step 4: Heat the melted butter in a pan over low heat. Add the eggs to the pan, and cook for 6 to 8 minutes, gently folding them over a few times with a wooden spoon until cooked.
Step 5: Time to assemble the sandwich! Take your English muffin, and on the bottom half add some scrambled egg, slices of fresh mozzarella, tomatoes and fresh basil. Top with balsamic vinegar!
Step 6: Top the breakfast sandwich with parmesan cheese and enjoy!

Fresh mozzarella is our favorite for this recipe because it’s classic in Caprese salad, and it also melts really well. However, shredded mozzarella or other sliced cheese can work if that’s what you have on hand.
