We had some extra pork chops around the house and decided to attempt a pulled pork recipe with the meat. Pulled pork is usually made from a different cut of meat, but I was pleasantly surprised at how tender, delicious, and flavorful these pulled pork sandwiches turned out!
You can slow cook or pressure cook the pork chops with some spices and apple juice to start, then shred and stir in your favorite BBQ sauce before serving. I love serving these up with some delicious White Fence Farm coleslaw and our favorite copycat Costco tortellini pasta salad for a full meal.

While pork shoulder is the traditional cut of meat for pulled pork, using fattier bone-in pork chops is a great alternative!
I also slow cook (or pressure cook) the pork shoulder with a little salt, olive oil, red onions, and spices: paprika, chili powder, cumin, and black pepper. This gives both the pork and onions a lot of flavor.
Apple juice and a little apple cider vinegar give the pork a wonderful sweetness and a bit of tang. Pork + apples are a classic combination, and work wonderfully in this recipe.
And finally, mix the shredded pork with your favorite BBQ sauce of choice. You can use a homemade BBQ sauce, a low sodium BBQ sauce, or your favorite bottled sauce from the store.
Additions and Substitutions
You can also serve these sandwiches with coleslaw, if you prefer. I like coleslaw on the sandwich for a little crunch and flavor, but that is totally optional and up to you.
Use regular bread or Hawaiian roll sliders for a sweeter sandwich.
You can omit the onions in this recipe if you just want the cook the pork by itself.
How To Make This Recipe
Step 1: In the bottom of the crock pot, add the olive oil and onions, and toss well to combine.
Step 2: Add the paprika, chili powder, cumin, and black pepper to the pork and onions. Mix well to combine, coating the vegetables in as much of the spices as possible. Add the pork chops on top.
Step 3: Pour in the apple juice and the apple cider vinegar to the bottom of the crock pot.
Step 4: Cover and cook on low for 8 to 10 hours or high for 5 to 6 hours, until the pork chops are fork-tender and reach an internal temperature of 200 degrees Fahrenheit.
Step 5: Once the pork is done, remove it from the bone and place it into a bowl. Shred it with two forks and toss the shredded meat with BBQ sauce.
Step 6: Serve hot, on buns, rolls, or over baked potatoes. Enjoy!

Yes! If you cook the pork chops until tender (in a slow cooker or pressure cooker) you can shred them just like pork shoulder and make pulled pork. Toss with your favorite barbecue sauce and enjoy.
You can use bone-in pork chops, or boneless. You want to pick the chops that have the greatest amount of fat on them. I used bone-in and they turned out great.
Store in an airtight container and refrigerate. Reheat and enjoy within 3 days.
