This easy school breakfast pizza recipe is made with fresh mozzarella, tomato sauce, basil, and greens, is ready in less than 10 minutes! A quick and tasty breakfast that everyone can enjoy on their way to school or work.

Ingredients
  

  • 4 slices bread any kind you prefer
  • 2 tablespoons unsalted butter
  • 1/2 cup tomato sauce
  • 4 teaspoons basil chopped
  • 4 ounces fresh mozzarella cheese
  • 1 cup arugula substitute fresh spinach

Instructions
 

  • Melt the butter in the microwave or sauce pan. Set aside.
  • Toast your bread slices. Brush them with melted butter after they are toasted.
  • To each piece of toast, add a tablespoon of tomato sauce, 1 teaspoon of sliced basil, then the fresh mozzarella on top.  Place the assembled pizza toasts on a sheet pan, place on an even layer.
  • Place the sheet pan on a center rack in the oven. Broil on low heat for 4-5 minutes, until the mozzarella cheese has melted and begins to brown and bubble. Keep an eye on the toasts, as they can burn quickly under the broiler, so pay attention after 4 minutes until the toasts are ready.
  • Remove toasts from the oven, and top with fresh arugula.  Enjoy!
