This Chicken Marbella has fantastic flavor – the spices, white wine, and dried fruit really amp up this chicken to a whole new level. I love the sweet/salty combo of this dish – its a perfectly easy throw-together meal!
This family recipe for Chicken Marbella in the instant pot came from my mother-in-law, who makes delish soups and stews! She introduced me to this dish, and I absolutely loved it. This version comes together quickly in the Instant Pot for an easy weeknight dinner!
Chicken Marbella is an American dish, not at all Spanish in origin. It combines chicken with potatoes, carrots, prunes, onions, garlic, and white wine. I first had this at my mother-in-law’s house in Canada and absolutely loved it!

Ingredients You’ll Need
- Onions, Carrots, Potatoes
- Chicken – I used chicken breasts from a local market. You could also use chicken thighs, just make sure any chicken you use is boneless and skinless.
- Extra virgin olive oil
- White Wine – I used pinot grigio, but you can use chardonnay.
- Prunes – I like pitted prunes, which give a rich sweet flavor.
- Kalamata Olives: make sure they are pitted!
- Capers
- Vegetable Stock – I like to use low sodium vegetable stock for my recipes because it has great flavor
- Oregano: a spice I always put in my stews, tacos, or fajitas! This dried oregano has a bright and earthy flavor.
- Sea Salt & Pepper to Taste

How To Make Chicken Marbella in the Instant Pot
Step 1: Dice your chicken into 1/2 inch cubes. Place in the inner pot of the Instant Pot, add olive oil, and cook on Sauté mode for 7-8 minutes until the chicken begins to brown.
Step 2: To the chicken, add the garlic and onions, and sauté for 2 or 3 minutes until they begin to brown. Add the wine and deglaze the bottom, scraping any pieces of chicken or garlic that stuck to the bottom of the pot.
Step 3: Add the onion, carrots, potatoes, brown sugar, and oregano. Stir to combine.
Step 4: Add the prunes, olives, capers, and vegetable stock. Seal the lid, and set the instant Pot to Manual or Pressure Cook and cook on high for 15 minutes. Allow to naturally release afterwards.
Step 5: Add in the fresh chopped parsley. Taste and adjust the seasonings, adding more salt or pepper as desired.
Step 6: Serve over rice or pasta, and enjoy hot.

- 2 cups Vegetable Stock
