Ingredients You’ll Need

  • Onions, Carrots, Potatoes
  • Chicken – I used chicken breasts from a local market. You could also use chicken thighs, just make sure any chicken you use is boneless and skinless.
  • Extra virgin olive oil
  • White Wine – I used pinot grigio, but you can use chardonnay.
  • Prunes – I like pitted prunes, which give a rich sweet flavor.
  • Kalamata Olives: make sure they are pitted!
  • Capers
  • Vegetable Stock – I like to use low sodium vegetable stock for my recipes because it has great flavor
  • Oregano: a spice I always put in my stews, tacos, or fajitas!  This dried oregano has a bright and earthy flavor.
  • Sea Salt & Pepper to Taste
