I love a good and easy homemade sweet bread, and this apple bread couldn’t be simpler to make! I don’t bake too often, so I love to take any easy shortcuts that I can for an easy and quick dessert. This recipe is one of the best ‘dump cakes’ – add everything to a bowl, mix, and bake.
This recipe uses cake mix and self-rising flour to make this sweet bread so delicious! It takes 5 minutes to mix, 35-45 minutes to bake, and you have a wonderful and easy apple bread that tastes 100% homemade (even though it uses some serious shortcuts).

I use yellow cake mix for this basic recipe – as it has a wonderful flavor and crumb. I also use unsalted butter for greasing the loaf pans so the bread doesn’t stick.
Apple Pie Filling – I used a can of pie filling which adds a wonderful sweetness and flavor to the bread.
Adding some lightly beaten large eggs to the batter gives it a wonderful moistness and helps the cake develop a nice texture.
Self-rising flour has leavening mixed in, and gives this dish more of a firmer bread-like texture (not crumbly like a cake).
I add cinnamon in the bread dough, and top the loaves with sugar for a nice crunch in each bite! Use turbinado sugar (or a very course grain sugar) for an extra-crunchy topping.
Adding a diced apple to the batter also gives the bread a nice flavor and moisture. Use any apples you prefer (I had a delicious Cosmic Crisp apple on hand) like gala, Granny smith, or Macintosh.
Additions and Substitutions
Adding 1/2 cup of chopped walnuts would be a delicious addition to this bread!

How To Make This Recipe
Step 1: Preheat oven to 350 degrees Fahrenheit (or 175 degrees Celsius). Grease two standard loaf pans with butter, or line them with parchment paper.
Step 2: In a large mixing bowl add the yellow cake mix, self-rising flour, and cinnamon. Stir to mix the dry ingredients evenly.
Step 3: Add the wet ingredients: Pour in the lightly beaten eggs (I beat them in a small bowl first) and the entire can of apple pie filling. Stir gently until everything is just combined, it’s okay if the pie filling breaks up a little.
Step 4: Fold in the finely diced fresh apple into the batter. Divide the batter evenly between the two prepared loaf pans.
Step 5: Sprinkle the top of the batter with the sugar (or brown sugar) for a sweet, slightly crunchy topping. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
Step 6: Cool the bread in the pans for about 10–15 minutes, then transfer to a wire rack to cool completely to room temperature. Slice and serve.
