We recently found a great new restaurant while traveling – Bahama Breeze! It’s island-inspired dishes (not to mention the coconut shrimp & margaritas!) were fantastic, especially the jerk chicken pineapple bowl we ordered.
I had to make a copycat at home, and my husband says this one is even better than the restaurant version! Start by coating chicken in jerk seasoning, cooking it in a large skillet until brown, and tossing the chicken with fresh vegetables in a sweet & tangy sauce.
Serve with rice (and bonus points for a pineapple bowl, just like the restaurant), and you have a tasty tropical dish in no time! Note: This isn’t Bahama Breeze’s official recipe, just a copycat I tested (and thoroughly enjoyed) at home.

Ingredients for this Bahaman Breeze Copy Cat Jerk Chicken Recipe
- Chicken – you can use chicken breasts or chicken thighs for this recipe – I used thighs which had a great flavor!
- Fresh Pineapple – I used cut fresh pineapple in the dish, as well as pineapple juice in the tangy sauce.
- Bell peppers – I used both green bell peppers and red bell peppers
- Fresh garlic cloves
- Green onions
- Spices – paprika, brown sugar, optional low sodium soy sauce, and ginger.
- Fresh lime juice
- Rice, for serving
How To Make Jerk Chicken Bowls with Pineapple
- In a large bowl, add the chopped chicken and the jerk seasoning. Toss until the chicken is well coated in the spice. Take a skillet or heavy pan, add the chopped chicken and 1 tablespoon of the olive oil. Sauté chicken over medium heat for 10-12 minutes, turning it so it is cooked evenly on all sides and beings to brown. Chicken is done when it is cooked to 165 degrees Fahrenheit. Once cooked, remove chicken from pan, and set aside.
- In the same pan, heat the other tablespoon of olive oil, and add the onion and garlic to the pan. Sauté for 2-3 minutes on medium heat. Add the bell peppers and chopped pineapple, and continue cooking for 6 minutes until the bell peppers start to soften.
- Add the cooked chicken back into the pan. Add the pineapple juice, soy sauce, and paprika. Stir well to combine, and continue cooking on medium heat until sauce begins to boil.
- In a small bowl, add the corn starch and cold water and mix well. Add the mixture to the chicken and vegetables, and stir until sauce thickens. Taste, and adjust seasonings as desired.
- Serve chicken and vegetables over steamed rice – and bonus points if you serve it in a pineapple bowl, just like the restaurant! Store leftovers in an airtight container for up to 2 days.
More Optional Add-Ins & Substitutions
For a spicier Jamaican jerk chicken, add in Scotch Bonnet pepper in while sautéing the bell peppers.
Switch up the protein – add in cooked shrimp for a shrimp pineapple bowl recipe, or for a vegetarian version, use black beans instead of chicken.
To make the sauce creamy, you can add in 1/2 cup of coconut milk or even heavy cream.

- 1.5 lb chicken chopped, use thigh or breast meat
- 2 tablespoons olive oil divided
- 1 tablespoon jerk seasoning
- 1 medium onion sliced
- 3 cloves garlic minced
- 2 bell peppers sliced
- 1.5 cups pineapple chopped
- 1/2 cup pineapple juice
- 2 teaspoons soy sauce optional
- 1 teaspoon paprika
- 1 tablespoon corn starch
- 1 tablespoon cold water
- 2-3 green onions sliced
- 4 cups cooked rice
- 1 lime juiced

- In a large bowl, add the chopped chicken and the jerk seasoning. Toss until the chicken is well coated in the spice.
